
by the way, poached eggs in red sauce (just a little bit of a jar of marinara) with a pinch of cayenne pepper, served over lightly steamed spinach for breakfast. would have highly benefited from a chunk of crusty bread to soak up some of the juices but otherwise flawless.

so poached IN the red sauce, or poached, then topped with red sauce. if the former, my "duh" epiphany: one can poach eggs in liquid other than water!
i poached them in water until they were slightly undercooked and then i threw them into the red sauce to finish.

Just found your blog from the Herbivoracious blog. Love what I see. There are so many dry food blogs out there with little creativity and passion. Obviously not a hurdle for you!
So now I actually made this and discovered it's great as a midnight snack. I made a variation - an egg on top of a piece of toast, topped with red sauce, topped with chopped cilantro. And the steamed spinach was great, too, on the side.
Oh yum....
I'm pregnant right now and can't have poached eggs, but thanks for making me drool!

Was looking for breakfast ideas when I came across this, looks sooo yum but am terrified of trying marinara sauce with my breakfast. Yikes. Can't wait to try it though :)
