lazy chili verde and a tasty dessert.

Another day, another easy as pie crock pot recipe. Actually, way easier than pie. Here, we can once again give all the credit to Trader Joe's- maybe I can sucker them into paying me for product placement, since I'm always raving about them. But seriously, they make some yummy stuff.

This chili verde recipe is incredibly straightforward. Add a few smashed cloves of garlic, a diced onion, a pork tenderloin (or shoulder, or butt) and 1 1/2 jars of TJ's green salsa to your crock pot. Let it stew for a few hours (I did 5) and shred with a fork. We chose to toss ours into quesadillas, but you could do burritos, tacos, taco salads, sandwiches, whatever.

You're probably wondering why my dang quesadillas are square. WELL, my stupid package of tortillas wasn't sealed all the way, and the edges of them were a little stale and crispy on one side. I lopped them off, but then my tortillas looked all lopsided and dumb, so I lopped off the rest to even it out. And then I remembered something delicious that I love- something I haven't had in ages. Fried tortillas topped with cinnamon and sugar! I fried the little wedges in olive oil (it's the only oil we keep around usually) and tossed them with cinnamon and sugar.

A simple dessert to go with a simple dinner. Go forth and crock pot!

this sounds so delicious! forgive me for my ignorance, but i've never cooked with a crockpot before (except for chili.) you don't have to cook the pork tenderloin first, do you? thanks!

Dude, I work at the SE Trader Joe's, in the demo stand serving food. I bet we've totally crossed paths. Crazy! Small world. =)

cats- you put the meat in raw. it cooks slowly in the crock pot. :)
