hasselback potatoes.

I see these pop up on food blogs here and there, and they look so adorable and tasty! I finally got around to trying it.

There's nothing too fancy about these hasselback potatoes- they are just baked potatoes fanned out by slicing it about 3/4 of the way through. I was hoping that the areas exposed by the slits would help the center crisp up a little more than it did- it was really just like a fancy-looking baked potato.

Slice up a potato, stick some garlic in somewhere, drizzle with olive oil. Bake about an hour at 400ºf. I topped these with caramelized shallots and some grated gruyere, which was- uh, REALLY GOOD, duh.

I've made these and they DID get crispy, but it was because my recipe called for a ridiculous amount of grease, half olive oil and half butter...yum though.

I think I've seen these called hedgehog potatoes too, they were made with the small purple potatoes! I love your blog, thanks for sharing.

heya I tried this recipe before but I used little potatoes. they turned out really crispy.

but I had trouble slicing them 3/4 of the way through though, they kept breaking off!

Looks like she uses a smaller potato as well to get more crispiness.

The only thing that potato is missing is some of God's currency, also known as BACON.

i have an old recipe card with these on it, but they don't have the caramelised shallot or gruyere...mmm! nice upgrade! are they called hasselback for the football player? i would have to make them for football fanatic hubby (he works for the seahawks) and tell him the name of them!

At first I thought it said hasselbeck and I was like "what, a republican potato?"

i made these a few months ago and they were ah-mazing! i agree about the crispiness however...but they are still so yummy.

"hasselBECK" potatoes have to be eaten while wearing pirate shirts like she does on the view, in order to fully appreciate their flavor.

i must say, although these potatoes have NO RELATION to her or her hubby, they made me think of her too. (and i can't stand her.)
