good lord. salami. onions.

A few minutes after posting about my soup, I started browsing Tastespotting as I often do while my son naps. I like to get ideas for dinners, things for Summer & I to bake and share for the blog, whatever. Of course, it usually makes me RAVENOUSLY hungry- today being no exception. I had lunch early, around 11:30, so now at around 3, I start getting the pre-dinner rumbles. I'm not hungry enough for a meal, but I definitely need a snack.

But wait, I'm getting ahead of myself. So I was browsing tastespotting and I saw THIS. It made my stomach freak out, I think my mouth actually started watering. I ran into the kitchen, hacked up our one remaining onion, and caramelized it in a frying pan.

It didn't take long to go from that, to this:

They're nice and brown, but I didn't let them go for too long, because they're going on a pizza and I don't want them to dry out in the oven. But what does that have to do with my PERFECT BITE, pictured at the top of the post? While I was cooking the onions (recipe: onions. pan. oil. fry. let turn brown. add water here and there to prevent burning.) I started rummaging around in the fridge and I saw the package of sopressata that I'd picked up this afternoon, sitting next to a container of fresh mozzarella. It all happened so fast, all of the sudden-

It was in my mouth and delicious and, and- gone. Aw. So now what? Tonight, pizzas with amazing salami, caramelized onion, basil and fresh mozzarella. ARE YOU HUNGRY YET? I AM SO HUNGRY NOW.

i've no idea how i stumbled onto your site -- i may have first gone thru a half dozen other links originating from last month's search of norwegian card designs. anyway, it's been fun to peruse! your yummy bits of food info are luscious & simple to read & follow.

funny, i normally never ever sign onto blogs, facebook, etc. but yours is now part of a select group of 7 sites that i frequent regularly. i am even gonna try some of your recipes: i like the campfire orange cake idea, the peanut butter yogurt, the cascadian farms broccoli & pkging & of course, yesterday's humdinger of a simple eat: sopressata (which i just served with fresh basil & heirloom tomatoes... not as easy to find in calgary, canada!)

Oh my goodness, your blog is making me hungry! That sopressata and mozzarella look especially yummy :) I come to you by way of caretoeat.net, and am excited to have found fellow Portlanders! I was born and raised here, too, and get the baking bug each fall as well. Happy baking!

So yesterday I managed to make both your "perfect bite" (with slices of parmesan salami...so yummy) and the gruyere and caramelized onion grilled cheese sandwiches. It was a good day, thanks so much!
